What you’ll need

Ingredients

Ingredient amounts make 4 servings. Nutrition below is for one serving.

  • 700 g Raw boneless skinless chicken breast
  • 150 g Plain low-fat yogurt
  • 40 g Fresh lemon juice
  • 20 g Olive oil
  • 16 g Garlic, peeled and minced
  • 25 g Tomato paste, no added salt
  • 3 g Paprika
  • 2 g Ground cumin
  • 1 g Ground cinnamon
  • 1 g Ground black pepper
  • 3 g Fine salt

Make it

Instructions

  1. 1

Cut chicken into even 3 cm cubes. Mix yogurt, lemon juice, oil, garlic, tomato paste, spices and salt in a bowl; coat the chicken, cover and refrigerate for 4 hours.

  2. 2

Use metal skewers, or soak wooden skewers in water for at least 30 minutes while the chicken marinates. Thread the chicken with small gaps and discard any leftover raw marinade.

  3. 3

Preheat a grill or nonstick grill pan to medium-high. Cook skewers for about 12–16 minutes, turning every few minutes, until the thickest centre reaches 74°C. Lower the heat if the coating darkens before the centre cooks.

  4. 4

Rest for 5 minutes and divide into four equal servings. Nutrition conservatively counts all the listed marinade. Log any bread, rice, salad or sauce separately.
