What you’ll need

Ingredients

Ingredient amounts make 4 servings. Nutrition below is for one serving.

  • 700 g Raw boneless skinless chicken breast
  • 150 g Plain low-fat yogurt
  • 20 g Olive oil
  • 30 g Fresh lemon juice
  • 25 g Tomato paste, no added salt
  • 12 g Garlic, peeled and minced
  • 4 g Paprika
  • 2 g Ground cumin
  • 1 g Ground black pepper
  • 3 g Fine salt

Make it

Instructions

  1. 1

Cut chicken into even 3 cm cubes. Mix yogurt, oil, lemon, paste, garlic, spices and salt; coat chicken and refrigerate covered for 2 hours.

  2. 2

Use metal skewers, or soak wooden skewers in water for 30 minutes. Thread the chicken with small gaps and discard leftover raw marinade.

  3. 3

Preheat a nonstick grill pan or grill to medium-high. Cook 12–16 minutes, turning every few minutes, until the thickest chicken centre reaches 74°C. Do not add unmeasured oil.

  4. 4

Rest 5 minutes and divide evenly into four servings. The estimate includes all marinade even if some is discarded; log accompaniments separately.
