What you’ll need

Ingredients

Ingredient amounts make 2 servings. Nutrition below is for one serving.

  • 200 g Whole egg, raw, without shell
  • 400 g Tomatoes, trimmed
  • 120 g Mild green pepper, trimmed and seeded
  • 15 g Olive oil
  • 2 g Paprika
  • 1 g Ground black pepper
  • 2 g Fine salt

Make it

Instructions

  1. 1

Dice peppers and tomatoes, retaining tomato juices. Beat the eggs lightly in a clean bowl.

  2. 2

Heat all oil in a wide pan over medium heat. Soften peppers for 5–6 minutes, then add tomatoes, paprika, pepper and salt. Simmer uncovered 10–12 minutes until thick but still moist.

  3. 3

Reduce heat, add eggs and fold gently for about 3–5 minutes until set with no liquid egg remaining; egg dishes should reach 71°C. Do not overcook until dry.

  4. 4

Divide the entire pan into two equal portions. Count bread, cheese or additional oil separately.
