What you’ll need

Ingredients

Ingredient amounts make 4 servings. Nutrition below is for one serving.

  • 600 g Raw ground beef, 90% lean, 10% fat
  • 100 g Onion, peeled
  • 25 g Fresh parsley leaves and tender stems, washed and dried
  • 8 g Garlic, peeled and minced
  • 4 g Ground cumin
  • 2 g Paprika
  • 1 g Ground black pepper
  • 3 g Fine salt
  • 10 g Olive oil

Make it

Instructions

  1. 1

Finely grate onion, retaining its juice, and mince parsley and garlic. Mix with beef, cumin, paprika, pepper and salt. Knead by hand for 3–4 minutes until cohesive; do not taste raw meat.

  2. 2

Cover and refrigerate for 30 minutes. Shape into sixteen oblong patties of equal size, about 1.5 cm thick.

  3. 3

Brush all 10 g oil over the patties. Heat a grill pan over medium-high heat and cook in batches 8–12 minutes, turning, until browned and the centre reaches 71°C. Lower the heat if the outside darkens too quickly.

  4. 4

Rest 5 minutes and serve four köfte per person. Nutrition counts all raw ingredients and oil; discarded pan fat can make the actual amount eaten lower.
