The short answer

Start with menemen for eggs, lentil soup for a bowl, lahmacun or gözleme for bread, köfte or tavuk şiş for grills, imam bayıldı for eggplant, kısır for bulgur, mantı for dumplings, or kuru fasulye for beans. Each recipe defines its serving.

A first taste of Turkish food

Turkish food reaches from egg breakfasts and lentil soups to grilled meats, thin breads, yogurt sauces and olive-oil vegetables. This collection gives you ten different ways to start cooking, with English, Persian and Arabic recipe versions. It introduces a few favourites rather than representing every region.

Popularity and a measured ranking are different things. Reporting on Yemeksepeti’s 2025 orders highlights lahmacun and lentil soup among familiar choices in major cities. We use that as a limited market signal alongside culinary references, not evidence that every dish here ranks in a current global top ten.

The linked recipes are original Vitalo home adaptations. The source list supports culinary context, not a claim that the authors tested or endorsed our versions. Family methods vary; use the ingredient list and serving definition of the recipe you actually cook.

1. Menemen — Turkish Eggs with Tomato and Pepper

Menemen turns a few breakfast staples into a pan for sharing: sweet softened pepper, juicy tomato and gently folded eggs. Onion and cheese vary between cooks; Vitalo’s version uses neither. Eat it from the pan if you like, but divide the recipe before deciding how much to log.

Soft scrambled eggs in a tomato and green-pepper base. One serving is half the pan. Contains egg; bread and cheese are not included. This version has no onion.

2. Mercimek Çorbası — Turkish Red Lentil Soup

For something spoonable, start with mercimek çorbası. Red lentils break down during simmering, giving the soup body without cream. This home version uses carrot and tomato paste, then finishes with lemon. The recipe begins with dry lentils; an equal weight of cooked lentils is not interchangeable.

3. Lahmacun — Thin Beef Flatbread

Lahmacun is about a thin base and an equally thin topping of minced meat and vegetables. It is different from a thick cheese-topped pizza. Vitalo makes four rounds from an unleavened home dough; spreading the filling thinly helps the beef cook while the bread crisps.

Thin unleavened home-style lahmacun with minced beef and vegetables. Makes four flatbreads; one serving is one. Contains wheat; lemon, salad and sauces are extra.

4. Turkish Beef Köfte — Grilled Meatballs

Köfte has many regional forms. This version is a small grilled beef patty with cumin, onion and parsley. We omit breadcrumbs rather than silently estimating a bread-containing mixture. The stated portion is four of sixteen patties; a rice plate or a bread sandwich is a separate meal assembly.

Cumin and parsley beef köfte, made without breadcrumbs in this version. Makes sixteen small patties; one serving is four. Bread, rice and sauces are excluded.

5. Tavuk Şiş — Turkish Chicken Skewers

Tavuk şiş is the chicken-skewer choice in this collection. Yogurt and paprika give this adaptation its coating, with chicken breast specified for reproducible weights. Marinating takes longer than grilling, so plan the two-hour refrigerator rest. The estimate counts all marinade and excludes side dishes.

6. Spinach and Feta Gözleme

Gözleme offers a crisp outside and a soft filling. The spinach-and-feta version here starts with plain dough, not ready-made pastry. Cook off excess spinach moisture before filling so the parcels are easier to seal. Cutting a parcel into several pieces does not turn each piece into a full recipe serving.

Thin pan-cooked parcels with spinach and feta. Makes four parcels; one serving is one. Contains wheat and milk. All dough, cheese and brushing oil are included.

7. İmam Bayıldı — Stuffed Eggplant

İmam bayıldı belongs to the olive-oil vegetable side of Turkish cooking. Onion, tomato and garlic fill the softened eggplant. This version roasts the halves and measures the oil, which makes its method and calorie estimate different from versions that fry or braise in larger amounts of oil.

Eggplant filled with onions, tomato and garlic, baked with measured olive oil. Four large halves; one serving is one half. This oven adaptation contains no meat; bread and rice are extra.

8. Kısır — Turkish Fine Bulgur Salad

Kısır is a bulgur-led salad, unlike a parsley-dominant tabbouleh. Fine bulgur absorbs hot water before it meets paste, herbs and vegetables. Vitalo uses lemon and tomato paste, with no pomegranate molasses or pepper paste; that is a deliberately simpler adaptation, not a promise of identical flavour.

Fine bulgur salad with tomato paste, herbs and lemon. One serving is a quarter of the dressed salad. Contains wheat. This lemon-only version omits pepper paste and pomegranate molasses.

9. Mantı — Beef Dumplings with Garlic Yogurt

Mantı rewards a little patience: small dough squares are pinched around a beef-and-onion filling, then cooked and served with garlic yogurt. This version finishes with paprika butter. Both sauces and the flour used for rolling are included in its four portions; a spoon of dumplings alone is not the serving used in the table.

Small beef dumplings with garlic yogurt and paprika butter. Four servings, each one quarter of dumplings and both sauces. Contains wheat, egg and milk. All flour, including dusting, is counted.

10. Kuru Fasulye — Turkish White Bean Stew

Kuru fasulye is a comforting white-bean stew, made with or without meat. Vitalo’s meat-free version starts with fully cooked unsalted beans to keep the weekday method manageable. Weigh the drained beans as specified; canned salted beans and a rice accompaniment change the resulting nutrition.

Nutrition estimates for the stated portions

The table uses each linked recipe’s defined serving. A bowl of soup, one flatbread and four köfte are different amounts of food; compare the portion before comparing calories. These are ingredient calculations, not restaurant averages.

We multiplied every edible ingredient’s weight by its USDA FoodData Central nutrient value per 100 g, summed the batch and divided by its yield. All oil, flour including dusting, feta, yogurt and butter are included. Lentils and bulgur use dry weights; white beans use cooked drained weights, eggs exclude shell, and meat uses raw edible weight.

No cooked yield was measured, so these values are not per 100 g of finished food. Marinade and rendered-fat losses are not subtracted; cooking-water losses are not modeled. Feta brands, beef fat percentage and pepper varieties can change the result. Missing optional sugar data stay unavailable. These formulations have not been kitchen-tested, laboratory-tested or dietitian-verified.

Before you cook

Set aside time for dough resting and mantı shaping, and allow the chicken’s full refrigerated marinating time. Extra-fine bulgur needs different hydration from coarse bulgur. Use fully cooked beans for the stated quick stew method. These details matter more than the serving photo.

Cook chicken to 74°C, ground beef to 71°C and egg dishes to 71°C; use a thermometer rather than colour alone. Keep raw meat away from salad and yogurt ingredients. Refrigerate perishable leftovers in shallow containers within two hours, or one hour above 32°C, at 4°C or colder. Reheat cooked leftovers to 74°C.

Check labels for wheat, egg and milk allergens. Count extra bread, rice, sauces and oil separately when logging your meal. The images are AI-generated illustrations; their plating and apparent portions are not measured serving guides.
